With St. Patrick’s Day right around the corner, I’ve been in the green mood. I had already made a New Year’s resolution to start eating healthier. So, I thought it would be really fun if I could combine these two things. I was also hoping this would be a great way to get my kids to eat a little healthier. I’ve been thinking of making the entire month of March “green,” and everyday having something green to eat, and maybe trying a few new green things we’ve never tried before. I’m cautiously optimistic.
