Yeah! Fall is just around the corner. It’s my favorite time of the year. I love the cooler weather, the falling leaves, football, school starting and everything pumpkin. I just can’t seem to get enough pumpkin this time of year.

Thanks to fall fast approaching and my love of pumpkin, I’ve found a fantastic and easy cookie recipe. I love that these are no bake cookies which makes them a huge time saver and that they only take a few ingredients to make. Give this quick and easy cookie recipe a try if you get that pumpkin craving and you’re short on time.

Pumpkin Spice No Bake Cookies

1 3/4 cup sugar

1/2 cup milk

1/2 cup butter

1 box instant pumpkin pie pudding mix

3 1/2 cups uncooked oatmeal

1 teaspoon pumpkin pie spice

1 teaspoon vanilla

Toss the sugar, milk, butter and pudding mix into a large saucepan over medium heat and bring to a boil, stirring constantly. Let mixture boil for 90 seconds and then pull the saucepan off of the heat. Throw the oatmeal, pumpkin pie spice and vanilla into the saucepan and stir until well combined. Drop rounded tablespoonfuls onto cookie sheets lined with wax paper. Let the cookies cool before eating.
